Blueberry Banana Bread

Ingredients: 

1_1/4 cups sugar
1/2 cup butter or margarine, softened
2 large eggs
1_1/2 cups mashed very ripe bananas (3 medium)
1/2 cup buttermilk
1 tsp vanilla
2_1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup fresh or frozen blueberries

Directions: 

Heat oven to 350 degrees. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray.

In a large bowl, stir sugar and butter until well mixed. Stir in eggs until well mixed. Stir in bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda, and salt just until moistened. Stir in blueberries. Pour into pan.

Bake 1 hour 15 minutes, or until toothpick inserted in the center comes out clean. Cool 10 min in pans or on wire rack.

Notes: 

Rather than run to the store for buttermilk, I substituted 1_1/2 tsp lemon juice and enough regular milk to make 1/2 a cup... let it sit for 5 minutes before using.
