- 20 Graham Cracker Squares (2 cups crumbs)
- 1/3 Cup melted butter
- 1/2 Cup granulated sugar
- 1 8-oz pkg. cream cheese
- 1/2 cup granulated sugar
- 2 eggs
- 1 tablespoon lemon juice
- 1 #2 can blueberry pie filling
Crush the 20 Graham Crackers. Melt butter & mix thoroughly with sugar & cracker crumbs. Pat firmly into bottom of a greased 9 x 13 inch baking pan.
In a bowl cream together cream cheese & 1/2 cup sugar until smooth, add 2 eggs, & lemon juice & beat. Pour over crumbs. Bake 20 minutes at 325°F. Cool. Spoon blueberry pie filling over top. Chill overnight. Cut in squares & serve with whipped cream.
Note: You can substitute cherries for the blueberries, but for cherry cheese cake you need 2 cans of pie filling. Jane Mahoney
