Blueberry Cheese Cake

Ingredients: 

Crust

  • 20 Graham Cracker Squares (2 cups crumbs)
  • 1/3 Cup melted butter
  • 1/2 Cup granulated sugar

Cheese Cake

  • 1 8-oz pkg. cream cheese
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon lemon juice

Topping

  • 1 #2 can blueberry pie filling
Directions: 

Crush the 20 Graham Crackers.  Melt butter & mix thoroughly with sugar & cracker crumbs.  Pat firmly into bottom of a 9 x 13 inch baking pan.

In a bowl cream together cream cheese & 1/2 cup sugar until smooth, add 2 eggs, & lemon juice  & beat.  Pour over crumbs.  Bake 20 minutes at 325°F.  Cool.  Spoon blueberry pie filling over top.  Chill overnight.  Cut in squares & serve with whipped cream.

Note: You can substitute cherries for the blueberries, but for cherry cheese cake you need 2 cans of pie filling. Jane Mahoney
