Chocolate Zucchini Cake

Ingredients: 
  • 1/2 Cup Soft Margarine
  • 1/2 Cup Vegetable Oil
  • 1 3/4 Cups sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1/2 Cup Sour Milk
  • 2 1/2 Cups Un-sifted Flour
  • 4 Tablespoons Cocoa
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Cloves
  • 2 Cups Grated Zucchini
  • 1/3 Cup Chocolate Chips
Directions: 
  1. Add eggs, vanilla & sour milk; beat with mixer.
  2. Mix together all the dry ingredients & add to creamed mixture; beat with mixer.
  3. Remove and discard center with the pulp and seeds from the zucchini, then grate the firm outer flesh.
  4. Stir in grated zucchini.
  5. Spoon batter into greased & floured 9x13x2” pan.
  6. Sprinkle top with chocolate chips.
  7. Bake at 325° F for 40-45 min.
  8. No frosting needed.
Notes: 

To make sour mild, add 1 teaspoon lemon juice to 1/2 cup milk.  Let stand 5 min. before using.
