Jambalaya

This is a combination of several recipes I found online and am happy with the way it turned out.

Ingredients: 
  • 12 ounces boneless skinless chicken breasts or thighs
  • 8 to 12 ounces smoked sausage, sliced
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • 2 stalks celery, sliced
  • 4 garlic cloves, minced
  • 1 large can (28 ounces) crushed or diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon parsley
  • 1 teaspoons basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 cup chicken broth
  • 1/2 cup dry white wine

 

  • 1 lb cooked shelled shrimp
  • 3 cups cooked rice
Directions: 
  • Add everything except the rice and shrimp to crock-pot.
  • Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours
  • 30 to 45 minutes before serving, add shrimp and cooked rice
