Pumpkin Cheesecake

Here is a combination of some of our favorite recipies.

Ingredients: 

Crust

  • 5 oz graham crackers (9 whole crackers), broken into large pieces
  • 3 Tbsp sugar
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 6 Tbsp unsalted butter, melted

Cheesecake

  • 2 - 8oz packages cream cheese, softened
  • 3/4 cup sugar
  • 1 can (15 oz) pumpkin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp salt
  • 2 eggs

Topping

  • 2 cups (16 oz) sour cream
  • 2 Tbsp sugar
  • 1 tsp vanilla extract
Directions: 
  1. Spray 9" springform pan with nonstick cooking spray.
  2. Combine graham crackers, sugar, and spices in a medium bowl then combine with butter
  3. Press crust ingredients evenly into the bottom of the springform pan.
  4. Beat cream cheese and sugar in a large mixing bowl until well blended.
  5. Beat in pumpkin, spices, and salt.
  6. Add eggs, one at a time, beating well after each.
  7. Pour into crust.
  8. Bake at 350° for 50 minutes.
  9. Meanwhile, combine topping ingredients.
  10. Spread topping over filling and bake 5 more minutes
  11. Cool on rack, chill overnight.
